This Is What Katie Couric Grows in Her Garden to Make Her Favorite Kale Salad

Katie Couric is busy with more than just journalism these days—she’s also the proud owner of an expansive vegetable garden, harvesting its produce to whip up fresh meals for her friends and family. She recently spoke to The New York Times about her favorite picks from her garden, so of course we had to dig up a few highlights.

Couric had plenty of summer recipes to choose from when her garden was in full bloom earlier this year. Her main meal of choice? Salads. She said she prefers to keep dinners light, so you’ll often see salads with loads of farm-to-table ingredients featured on her social media.

If there’s one particular veggie Couric is obsessed with it’s fresh tomatoes. You’ll find plenty of stories on her Instagram showing off homemade salads with cherry tomatoes (especially Caprese), pasta, and sandwiches. They’re also a staple in her newsletter Wake-up Call, which often features recipes she’s recently made.

From basil for homemade pesto to kale for one of her favorite summer salads, Couric’s garden is seemingly endless—and she’s posted plenty of her summer highlights on her Instagram, such as the stuffed zucchini flowers she served for a dinner, straight from her backyard. 

Speaking of salads, Couric told the New York Times that her garden had an influx of kale this year, which led her to experiment with plenty of kale salads. Her favorites: one with dried cherries mixed in and another topped with toasted pecans and cucumbers.

“I have a really great vegetable garden,” she said. “I’m sounding very Martha Stewart-slash-Ina Garten right now, I know, but I’ll go pick stuff from my garden. This year we grew a lot of kale so I’ve been making kale salads with dried cherries I ordered from Michigan. It could be kale salad with cucumbers and toasted pecans. I also like to make my own pesto because I grow a lot of basil.”

Over on Couric’s Facebook, there are plenty of abundant harvests to admire, including squash, green beans, lettuce, cucumbers, and (of course) plenty of variety tomatoes. 

Eggplants, jalapeños, and rows of vibrant flowers made up the rest of her garden last year—and her backyard also featured a large herb garden. Her favorite? You guessed it: basil.

If there’s anything more we want to see from Couric, it’s the journalist getting to star in her own cooking show. “I think I need a tomato sandwich show,” she quipped on her Instagram while raving over fresh summer tomatoes. We’d certainly tune in.
